~In Memoriam~

Chef Franco Gallo, originally from Siracusa, Sicily, Italy came to our country to train at the French Culinary Institute in New York, NY. He came to work for the Calandra family in the late 1990s and was our Head Chef and Supervisor of kitchen staff of both our restaurants, Cucina Calandra and Calandra's Mediterranean Grill.

Chef Alvaro Maura is the Head Chef at Calandra's Mediterranean Grill. Chef Alvaro has been with us from the opening of Calandra's Mediterranean Grill. He developed his chef skills while working as a chef at Wolf Gangpuck's Grand Cafe and as the head chef at Old Towne Dining in Disney World.
Chef Sergio has been pleasing restaurant patrons for over a decade. He has dedicated his life to the master of food. Chef Sergio developed a passion for cooking at a very young age by his charismatic mother, Lucia, who taught him to cook from his heart. He is now the Executive Chef for our new restaurant,
iL Vecchio Cafe.




Chef Costantino is a graduate of the Culinary Art Institute of Italy in Salerno. He opened his first restaurant in Genova, and moved to America 14 years ago. Chef Costantino has studied with some of Europe's finest chefs and is now proudly bringing his experience & knowledge to
Cucina Calandra's.

Our Chef Henry(aka"Henry the Pizza Man") is here to fascinate the children (and adults too!)with his skills at making a pizza or flatbread while you watch!

Chef David, originally from Portugal, came to America and began working for Calandra's Bakery in 1998. After arriving in the U.S. Chef David continued his training at Institute National de la Boulangerie Patisserie in France where he studied the culinary art of French Pastry Making. He is now the Head Pastry Chef for Calandra's Bakery.
